Creamy Chicken Potato Bake – The Ultimate Comfort Food

There’s something so satisfying about a warm, creamy bake straight from the oven, especially when it involves chicken, potatoes, and plenty of cheese! This Chicken Potato Bake is a family favourite in our house, and it’s the kind of dish that disappears quickly at the dinner table. It’s perfect for busy weeknights when you want something hearty and delicious without too much fuss.

This recipe brings together tender chicken breast, hearty potatoes, and a creamy, cheesy French onion sauce that’s packed with flavour. It only takes about 30 minutes in the oven once everything’s prepped, and the best part is how incredibly easy it is to throw together.

Ingredients:

  • 1kg Chicken Breast  
  • 4–5 large potatoes  
  • 600ml thickened cream  
  • 2 packets French Onion Soup mix  
  • 1 cup grated cheese (tasty or cheddar cheese work great)

Method:

  1. Prep & Cook – Dice the chicken breast and potatoes into bite-sized pieces. Pan fry or boil them until just cooked through.  
  2. Make the Sauce – In a large bowl, mix together the cream, French onion soup mix, and grated cheese until well combined.  
  3. Combine & Bake – In a large ovenproof dish, combine the cooked chicken and potatoes. Pour the creamy mixture over the top and stir through so everything is evenly coated.  
  4. Oven Time – Place in a preheated oven at 180°C (fan-forced) and bake for 30 minutes or until bubbling and golden on top.  
  5. Rest & Serve – Let it sit for about 5 minutes before serving. Pair it with steamed greens, carrots, or peas for a balanced plate.  
Cooked to perfection.

Tips:

  • This dish is even better the next day – leftovers heat up beautifully.  
  • You can switch out the chicken breast for thigh fillets for a richer flavour.  
  • Want a golden cheesy top? Sprinkle a bit of extra cheese on top before baking.
